Banana Milk-Washed Negroni

A milk-washed negroni with banana flavor, served chilled

shaved macadamia nut or nutmeg

Ingredients

  • 9 oz White Rum
  • 4.5 oz Luxardo Bitter Bianco
  • 4.5 oz Lillet Blanc
  • 0.75 oz citric acid solution
  • 6 oz banana milk
  • 6 oz whole milk
  • 5-8 threads saffron, ground
  • 1 - 1.5 ripe bananas
  • 0.5 tsp citric acid
  • 2 oz cold filtered water

Instructions

Start by prepping your banana milk. Blend until smooth and set aside. In a separate vessel, make the Negroni, combining the rum, bitter bianco, lillet blanc, and citric acid solution. Stir. Slowly pour the Negroni into the banana milk. Let sit for about 4 hours, or until milk really curdles and liquid starts to separate. Strain using a coffee filter, may take 2-3 times. Serve chilled. Can serve up in a coupe or over a large cube in a rocks glass with shaved macadamia nut or nutmeg.
